Marc Hébrart and his son Jean-Paul are the most famous growers in the village. The domaine was founded in 1964. Marc Hébrart owns 13.80 hectares Besides Pinot grapes from Mareuil, Aÿ, Avenay, Mutigny and Bisseuil they have access to Chardonnay from Chouilly and Oiry. Their vines ar twenty-eight years old on average. It is always a joy to visit Jean-Paul at his lovely 14 hectares of property by the Marne River.

Hebrart uses mainly steel tanks, with each parcel vinified separately. A small proportion of fruit from the old vine parcels is fermented in cask. Malolactic is routinely done, and the wines are disgorged six months before shipping. He belongs to the new type of well-educated, quality-concerned vintners – a grower to keep an eye on. Jean-Paul has found love in Cramant, and the object of his happiness is Isabelle Diebolt. What a cuvée! The Special Club is very reliable and it has a delightful aroma of the finest apple sauce.
