Bonnet is for me the only producer in the village who almost deserves his cult status. It would be interesting to see what this house could achieve with Pinot grapes from Aÿ or Verzenay. Their Rosé des Riceys has a seductive nose, and the owner’s Coteaux Champenois is Aube’s best. The Champagnes are also influenced by an intense grape aroma that lifts them above the wines of his neighbors. Owned by Bruno Paillard.
